This week, we are super excited to be part of the latest chapter in Omnipollo’s evolving collaboration series, uniting brewing pals across borders in a shared creative experiment. Introducing Three Times Three Vol. 7! This edition brings together seven breweries: Omnipollo (SWE), Verdant (UK), Bellwoods (CAN), Great Divide (US), Deep Fried Beers (US), Freak Folk (US), and Messorem (CAN), bridging tradition and innovation through one collective recipe: a bold, hazy DIPA.
The very first batch was brewed at Omnipollo’s Church Brewery in Stockholm a few weeks ago, but each brewery was also invited to brew the beer at their own home and tweak it slightly. Our version of this massive DIPA is very close to the original, with a wheat-heavy pale grist and heavily dry-hopped with Citra, Simcoe & Nelson Sauvin, at a massive 30 g/l! We also added a bit of Hop Kief® cryogenic dry hopping liquid for an extra oompf! Expect a tropical-forward, softly bitter DIPA born from shared curiosity, creative exchange, and a touch of Omnipollo’s magic.
Talking about Omnipollo’s magic, we couldn’t pass up the chance to brew another very special beer with them this week and to borrow one of their favourite tricks: fruit adjuncts! For our first-ever solo collab with Omnipollo, we’ve created a DIPA bursting with fruit character and dank pungency. Create Dangerously is loaded with Mosaic, Nectaron, and Eclipse hops, plus a cheeky hit of passion fruit purée added during fermentation.
We don’t usually play with fruit adjuncts in our beers, but chatting with Henok, Omnipollo’s founder, about how they use fruit to elevate flavour was seriously inspiring. After testing a few different purées, we all agreed that passion fruit was the perfect match, cutting through the booziness while enhancing the tropical notes from the hops.
